I look forward to future posting opportunities; I may not jump right in there, since I work with food 12 hours\day as a sous chef and purchaser at a full service establishment.
A lot of things I make are protected by a non-disclosure agreement, but I have worked in the industry for over 23 years, and cook a lot at home.

chucklee, I am looking forward to reading some of your stuff, I am a rank amatuer but I love to cook. I am sure you will be correcting some of my misinformation in the future. I am attending a crepes class with my 11 yr old daughter this week, it should be fun. My daughter is already starting to find her way around the kitchen and it provides some nice quality time on Sunday afternoons with the family. We usually have a dinner party every Sunday at home for about 6-8 adults and 3-4 kids and I do the majority of the cooking. I have a feeling that I may be spending as much time here as I do on HTS.
